I started by reading Flour, Water, Salt, Yeast – a book which goes into excruciating detail about making no-knead artisan bread – but started kneading dough once I felt more confidence about the rest of the process. Once you're familiar with what dough feels like when you've kneaded it, it's much easier to handle.
